Banks Herbarium is a distilled non-alcoholic base made from five botanicals, each run through the still separately so nothing gets muddied. Cassia bark gives a warm cinnamon edge, lemon myrtle sits up top, lime keeps it bright, wattleseed adds a roasted nutty depth, and wild Tasmanian pepperberry brings the spice. Cut with mountain water from the Yarra Valley and finished with quinine from cinchona bark, it lands bittersweet instead of sweet, which is the whole point of a tonic serve. Every 250ml can is 0% ABV and 9 calories, low sugar and vegan. Drink it cold from the can, or pour it over a full glass of ice with a wheel of ruby grapefruit, which pushes the citrus forward and softens the bitter edge.
