Quandong and strawberry gum are the reason to pay attention to this one. Both are Australian natives, the first a tart desert peach and the second a leaf with a berry and eucalypt edge, and they sit under a peach and prosecco style profile that would otherwise be fairly ordinary. What you get is fizzy and fruit-forward with a slightly resinous native lift that a standard bellini does not have. The bottle came out of a collaboration with Bondi Wash, an Australian botanical brand, which explains the focus on native ingredients. Construction follows the house method: distilled botanicals and extracts in carbonated Australian spring water, sweetened with stevia, so no sugar, no alcohol, no gluten and no artificial additives. Packs run four, eight or 24 bottles. Serve it properly cold in a flute where the bubbles have somewhere to go. It is the celebratory bottle in Monday's lineup.
