Amaro is a hard category to fake, because the bitterness has to come from somewhere real. Dr Zero Zero builds AmarNo in Italy from actual bittering botanicals, using sage, quassia, wormwood, Chinese rhubarb and quinine, with orange and caramelised sugar rounding off the edges. What comes out is rich and bittersweet with a faintly smoky character, and it finishes long the way a digestivo is supposed to. Worth knowing that this is not a dealcoholised product. There's no alcohol at any stage of production, which is a different process from stripping it out after the fact. It's vegan and gluten free, contains sulphites, and carries around 17g of sugar per 50ml serve. Drink it after a meal over ice, or use it as the bitter half of a zero-proof negroni alongside the brand's AperZero and an alcohol-free gin.
