The order matters. Fermentation and maturation happen first, so the fruity ester character a wheat beer depends on is already built before anything gets taken out. The result is a true 0.0%, not a 0.5%. Twenty-four calories per 100ml, 5.3 grams of carbohydrate, and a grain bill that stays inside the Bavarian purity law: water, malted wheat, malted barley, yeast and Herkules hops. It carries real folic acid and vitamin B12, and Paulaner leans hard on the isotonic angle, which is why you see this handed out at finish lines in Germany. Banana and clove sit where you expect them, with a light sweetness and a clean close. Serve it cold in a proper wheat glass. The alcohol stripped out gets converted to biogas for the brewery.
