Green ants taste like lime. That is not a metaphor, it is why Bininj people in Kakadu have eaten them for a very long time, and it is the reason this can works. Kaboh is the kundjehmi word for green ant, and the ants here are ethically harvested inside Kakadu National Park by Bininj people, part of a collaboration between Sydney based ALTD Spirits and the First Nations business Kakadu Kitchen. It is the second release in that series. Around the ants sits the usual gin and tonic architecture, so juniper, coriander, angelica, orris, cinchona bark and cucumber over sparkling water, with black pepper and handmade bitters sharpening the finish. The result is citrus sherbet with a savoury edge, no alcohol and no sugar, in a 250ml can. Gluten free. Not vegan, for obvious reasons.
