The ingredient list reads like a herb garden. Lemon verbena, lemongrass, hibiscus, lemon myrtle, liquorice root and peppermint all go in, joined by Murray River salt for salinity and verjus from Barossa Valley Semillon grapes for acidity. The unusual move is how NON gets structure. Instead of skins or tea, the liquid is dry-hopped with Eclipse hops and spices, borrowing a brewer's technique to give a wine alternative tannin and a menthol lift on the finish. Tart native citrus, a floral body, and 18 calories per 150ml serve, which makes this the lightest bottle in the range. Sparkling, vegan and gluten free. Serve it chilled in a wine glass. It works with grain salads, a South East Asian curry or stewed lamb and chickpeas, and it is the obvious one to open for aperitivo hour.
