Bitters & Soda Grapefruit

Grapefruit is the obvious partner for gentian. Both are bitter in roughly the same register, so this can reads as fruit rather than sweetness, with ripe grapefruit sitting over the same botanical base the Classic Dry uses: clove, allspice, rose hips, star anise, chamomile, gentian root, black peppercorn, caraway and cinnamon on carbonated water. The gentian tincture is grown in the south of France. There is no sugar in it and a 12 oz can lands at 5 calories, about as light as a full flavored drink gets. Serve it very cold over ice with a wide twist of grapefruit peel, or pour it long over a non alcoholic aperitif. Vegan, gluten free, and genuinely bitter, which makes it an adult drink rather than a soda.
