Little Saints uses ultrasound to extract its organic reishi, which keeps the beta glucans intact without dragging any mushroom flavor along with them, and the extract is standardized to a minimum 70 percent beta glucan. That's the reason a can of this tastes like grapefruit rather than like a forest floor. As a paloma it's straightforward, and it's better for being straightforward. Pink grapefruit up front, lime behind it, citrus rind on the finish, with a touch of salt in the build so the fruit doesn't fall flat. Sweetening comes from monk fruit juice concentrate, so there's no sugar and no sugar alcohols, and it stays under 0.5% ABV. Drink it very cold over ice. It takes garnish well, whether that's an orange slice or a few jalapeño coins, and it stretches with seltzer if you want to sip slowly.
