Clever works like a distiller rather than a soda maker, and the gin and tonic is where that shows most clearly. The base is a distillate made from a botanical infusion of juniper berries, green cardamom seeds and coriander seeds, the same three ingredients sitting at the heart of classic English gin. That is where the fresh herbal lift comes from. A touch of quinine goes in after, supplying the dry bitterness that makes a G and T taste like one instead of sweetened citrus water. Cans are 355ml, sold twelve to a case, and the drink sits under 0.5% alcohol by volume rather than a flat zero, which is worth knowing if you avoid alcohol entirely. Serve it very cold over ice with a lemon wedge. It took a Double Gold tasting medal at the 2021 San Francisco World Spirits Competition.
