Lemon verbena is an unusual thing to build a bottle around. It is a shrub, not a citrus fruit, and its lemon character is brighter and more sherbet-like than anything you get off a peel. Here it leads from the front instead of propping up juniper the way most alcohol-free spirits arrange things. Chris and Rose Bax distil it in Yorkshire using traditional copper alembics, the same kind of pot still classic spirits come off, rather than steeping botanicals in water and calling it finished. Around the verbena sit subtle Mediterranean herbs and citrus, with menthol and floral notes holding the balance so it stays crisp instead of turning soapy, which is the standard failure mode for herbal zero-proof bottles. Zero alcohol and zero sugar. That second number matters, because plenty of this category leans on sweetness to fill the space alcohol leaves. Serve it long over ice with a good tonic and a sprig of mint.
