Limoncello without the sugar coma is roughly the brief. Amalfi No 3 leans on the sweet and sour tension of Amalfi lemon, then pulls back on sweetness and adds a light bitter edge, which is what keeps it from turning into lemonade. The herbs and spices behind it are grown in Provence and processed fresh from the field, distilled individually with steam in the manner of French perfume production, then composed near Berlin. Apple, safflower and lemon concentrates sit alongside the botanical extracts. It carries 58 calories per 100 mL with 15 grams of sugar, which is real but well under a traditional limoncello, and stays under 0.3 percent alcohol. Build it as a lemon spritz over ice with an alcohol free sparkling or tonic. It is a warm evening drink and does not pretend to be anything else.
