Every spritz needs a base, and Laori built this one so its own aperitifs had something proper to sit in. It is a sparkling drink made from dealcoholized wine, 95 percent of the bottle, using Airén grapes from Spain and vacuum distillation to strip the alcohol gently enough to keep the grape aroma and fine bead intact. Citrus freshness and green apple sit over subtle floral notes, dry enough to work on its own and neutral enough to disappear into a spritz with Ruby No 4 or Berry No 6. At 18 calories per 100 mL with 3.3 grams of sugar it is far lighter than the aperitifs it mixes with, and it stays under 0.5 percent alcohol. Serve it very cold. Once opened it goes flat quickly, so finish it within three days.
