A blend of Macabeo and Garnacha gives this its rose-gold colour and the red fruit running through it. Both come off ZENO's organic estate in central Spain, fermented properly before the alcohol is removed at low temperature under high vacuum, then carbonated to 4.1 bar so the mousse holds instead of fading in the glass. Aromas are red berry with white peach behind. The palate is crisp and bright, nectarine and redcurrant into raspberry, with enough balance to finish long and faintly creamy. Alcohol measures 0.20 percent and a 175 ml glass sits near 15.5 calories. Blending and final tasting are led by a Master of Wine, which is unusual attention for a category that often skips that step. Serve it very cold with prawns, lobster, canapés or even pink meats like lamb and ham.
