Grown on ZENO's organic estate in central Spain, the grape here is Viura, the same variety that anchors white Rioja. It is fermented as a full wine before the alcohol comes out through low temperature vacuum distillation, then blended and tasted under the eye of a Master of Wine before bottling. The glass is polished green straw with pronounced citrus, passionfruit and green apple on the nose. Texture is the surprise. Ripe mango and passionfruit fill the mid palate, then crisp apple and zingy citrus carry into a long finish with a herbaceous elderflower note. Alcohol sits at 0.28 percent and a 175 ml glass runs around 15.5 calories. It suits salads, white meat, lighter cheeses and the kind of spicy food that alcohol usually fights with. Serve it properly cold.
