The Adelaide Hills sit high and cool enough that Chardonnay ripens slowly there, which is why the region has built a reputation on the variety. Edenvale takes fruit from those vineyards and gives the wine extended time on lees, the spent yeast left behind after fermentation, which is where the creamy texture and vanilla notes come from. White peach and green apple sit underneath, with a buttery softness on the finish. Alcohol removal happens after the wine is fully made, using a heat pump system that separates the wine into alcohol, dealcoholised liquid and aromatic essence, then blends the essence back in. What is left is under 0.5 percent alcohol and zero standard drinks. Pour it with lobster, roast chicken and tarragon, mushroom risotto, or brie and sourdough.
