Chardonnay carries more weight than most white varieties, which works in its favour once the alcohol is gone. Alcohol contributes a good deal of a wine's body, so a variety that starts out rich has more to spare. Edenvale's classic Chardonnay opens with fresh fruit aromas, then melon, citrus and apple across the palate, with subtle oak adding complexity and a smooth finish. The grapes are selected from South Eastern Australia and the wine is fully fermented before dealcoholisation brings it under 0.5 percent, which is zero standard drinks. That extra texture is why it pairs where lighter whites struggle. Poultry, pork, salmon, mild cheeses and anything in a cream sauce all work.
