Blanc de blanc means white from white, a sparkling wine made only from white grapes, and this one is predominantly Chardonnay. That gives it a cleaner, more precise line than a blend carrying red grapes would. White peach comes through first, then citrus, apricot and apple, with a complex oak note underneath and good balance across the palate. The fruit is selected from South Eastern Australian vineyards and the wine is fermented in full before alcohol removal takes it below 0.5 percent, which is zero standard drinks and roughly the level found in fruit juice.
