Macabeo is one of the traditional Cava grapes, which is exactly why ZENO chose it for the sparkling white. The wine is fermented, de-alcoholised at low temperature under high vacuum, then carbonated to 4.1 bar, roughly the pressure of a proper traditional method fizz rather than the soft sparkle most zero proof bottles settle for. That shows in the mousse, which is fine and stays put. Green apple, elderflower and creamy lemon zest lead the nose. The palate brings crisp apple and elderflower first, then mouth filling citrus, fresh lemon thyme and a hint of brioche on a long finish. Alcohol is 0.18 percent and a 175 ml glass is about 15.5 calories. Pour it with canapés, seafood, lighter meat, cheese or dessert, and serve it very cold.
