Bio Mousseux Dry starts from organically grown Spanish grapes, gets vinified, has its alcohol removed, then takes on its bubbles, which is why it is sold as a sparkling drink made from dealcoholised organic wine. The mousse is fine and long, the aroma stays restrained, and the character is spicy and balanced rather than sweet and fruity, which is what you actually want from a bottle that has to survive a toast. Organic here means vineyards run without pesticides, synthetic fertilisers or GM material. Serve it at 6 to 8 degrees in a flute. If sweet alcohol free sparklings have put you off the category, this is the corrective.
