Cuvee Dry is a blend rather than a single variety, sourced within the EU, and it is genuinely dry with no residual sugar propping it up. Green apple and gooseberry lead, the acidity is clean and sharp, and the structure is precise rather than generous. All of which makes it less a sipping wine than a working one. The winery recommends it as a spritzer and as a base for alcohol free cocktails, which is the right call, because it takes soda, citrus and bitters without turning sweet. Serve it very cold. Like everything here it starts as wine and loses the alcohol afterward, never the other way around.
