The number on the label is a temperature. Manufaktur Jörg Geiger runs its vacuum distillation as cool and as slow as it can manage, and every bottle in the GRAD°WANDERUNG range records the degree at which its wine was dealcoholized. Aromatics driven off during that process are captured as aroma water and partly returned at the end. This one starts from Riesling, 60 percent dealcoholized wine, then takes on apple, pear, peach and quince juice plus a herb extract and blossoms. The nose is pale grape and pear with quince and white flowers, and the palate is finely fruity and refreshing with the herbs coming through. The Gault & Millau Henris Edition tasting in March 2024 rated it Ausgezeichnet. Serve it colder than the reds, 6 to 7°C in a Riesling glass, with fine salads, fresh cheese, shellfish or light fish. Under 0.5% alcohol and 13.3 calories per 100ml.
