At 2 grams of carbohydrate and under 10 calories per 100ml, this is the driest thing in the GRAD°WANDERUNG range, and it tastes it. Sauvignon Blanc is the base, dealcoholized by vacuum distillation at the temperature printed on the label, with mirabelle and blossoms worked in afterwards. The character is vegetal rather than fruity. Green apple and gooseberry lead, there's a peppery edge running underneath, and the Gault & Millau Henris panel picked out green pepper, root vegetables and wormwood when they rated it Hervorragend in March 2024. They called it a top food companion, and that's the honest framing. This isn't built to sip on its own. Serve at 7 to 8°C in a white wine glass with cold starters, shellfish, or light vegetable dishes. Celeriac baked in a salt crust is the house suggestion. Vegan, under 0.5% alcohol.
