Wood is the differentiator here. The base is a barrel-aged reserve cuvée, and the barrique character comes through clearly on the nose alongside elderberry and red berries, then again on the palate as vanilla and cinnamon. Very few alcohol-free reds carry oak this legibly. The Gault & Millau Henris Edition panel rated it Hervorragend in March 2024 and described beetroot, bay leaf and pepper, top acidity, and a fine balance between earthy and winey notes with real length. The grapes come from organic farming and the bottle is vegan. As with the rest of the range, alcohol comes out by vacuum distillation run as cool and as slowly as possible, and the bottle is still under 0.5 percent. Serve at 14 to 16°C in a Burgundy glass with dark meat, cheese, or pasta carrying a fruit component. Braised beetroot with dill cream is the house pairing.
