This is mulled wine without the wine part, and the serving temperature is the whole design. Heat it to 55 or 60°C and no further, because boiling drives off exactly the aromatics the house protected during dealcoholization. Give it a stir or a swirl before it goes into the glass. The base is Merlot blended with perry pear, and the Bordeaux tannin structure stays detectable even under 0.5 percent alcohol, which is what keeps it from drinking like spiced juice. Black cherry, elderberry and ripe plum sit beneath dried herbs, star anise, cinnamon and a hint of violet, and the body is velvety with a mineral depth underneath. Manufaktur Jörg Geiger reformulated the current filling for more wine character and a finer spice structure. At 23 calories per 100ml it's lighter than any Glühwein you'll find. Contains sulfites.
