Tempranillo and Cabernet Sauvignon off a single organic estate in central Spain, fermented into a real wine and then stripped of alcohol using low temperature, high vacuum distillation. That method is the whole argument for ZENO, since gentler heat leaves more of the aromatics intact than older techniques did. What survives is genuinely red, ruby with a salmon edge, smelling of red and black forest fruit, sweet spice and a hint of green pepper. The palate runs blackberry and raspberry into plum and crisp cherry, with pepper and real tannin giving it weight and a long, creamy finish. Alcohol lands at 0.28 percent and a 175 ml glass carries about 17.5 calories against well over a hundred for a conventional red. It handles grilled and smoked meat, tapas and sharp cheese. Serve it a touch cool rather than warm.
