The white came after the rose, once it was clear the idea worked. Same method throughout: Chateau La Coste makes the wine at the estate in Provence, then removes the alcohol by vacuum distillation, evaporating at 35 to 40 degrees at most so the aromatics stay where they are. The estate calls the result 100 percent wine and zero percent alcohol, and that is the whole argument for it. NOOH is a pun on no and OH, the chemical symbol for the alcohol molecule, and it is pronounced like the French nous. Pair it the way the estate does, with sea bass grilled in olive oil and saffron, or a Mediterranean chicken with olives and lemon, both of which want something dry and cold rather than sweet. Bottles are 75cl. Serve between 4 and 6 degrees.
