Sauvignon Blanc gives this one its shape, and it is the most recent addition to the NOOH range. Chateau La Coste vinifies it as wine in Provence before the alcohol is stripped out under vacuum, an evaporation capped at 35 to 40 degrees so nothing gets cooked and the aromatics stay intact. Sparkling and dry, it is built for the job Champagne usually handles at a table, and the estate suggests it alongside a dark chocolate fondant with raspberries, which is a more interesting call than the standard dessert pairing. Serve it very cold, 4 to 6 degrees, in frosted glasses. The whole range grew out of customer requests and roughly three years of work by the estate's oenologists, whose starting position was that an alcohol free bottle should still be wine rather than flavored grape juice.
