Blanc de blancs means white from whites, and Carl Jung takes it literally with Chardonnay and nothing else. The wine gets made, the alcohol comes out, then the bubbles go back in, which is why the label calls it a sparkling drink made from dealcoholised wine rather than a sparkling wine. The bouquet leans citrus with pear, apple and a floral edge behind it, and the palate is fresh and lively rather than sweet. The fruit comes from Spain and a 100ml glass runs about 20 calories. Serve it between 6 and 8 degrees, cold enough to keep the mousse tight. Use it where a dry sparkling belongs, which is an aperitif, a toast, or anything salty and fried.
