A blend rather than a single grape, this red pulls fruit from EU vineyards and takes the same route as everything else the house makes. The wine is fermented conventionally first, then the alcohol comes out through the dealcoholization process Dr. Carl Jung patented at the family cellar in Rüdesheim more than a century ago. What survives is a dark, spicy pour with real tannin and acidity that stays in balance rather than turning sharp. Blackberry and blackcurrant sit underneath the spice. Because the tannin is genuine, it behaves like wine at the table instead of like grape juice. Carl Jung points it at roasted meats and steak, and at slow dishes such as boeuf à la mode and coq au vin. It also holds up against chocolate desserts, which most alcohol free reds cannot manage. Around 25 calories per 100ml glass. Serve at cool room temperature.
