Cabernet Sauvignon grows in unusually small berries with thick skins, which is where its colour and tannin come from, and that structure is exactly what survives dealcoholisation best. Carl Jung's version holds a strong colour and real tannic grip, with cassis and blackcurrant leading and an elegant acidity carrying a long finish. The wine is made in Spain, then the alcohol is removed by the low temperature vacuum process the company patented over a hundred years ago. About 19 calories per 100ml. Serve it at 10 degrees, cooler than you would pour a full strength Cabernet, since there is no alcohol warmth to lift the aromatics. Grilled food is the obvious match and lamb is the one the winery names.
