Victoria Distillers built this zero proof spirit off the bones of its Empress 1908 Indigo Gin, the bottle named for the Fairmont Empress hotel in Victoria, British Columbia. The botanical blend leads with citrus, grapefruit for aroma and lemon for a tangy edge, then lays subtle juniper and a touch of spice underneath, balanced with cane sugar and filtered water. Butterfly pea blossom does double duty here. The distillery found it in a bespoke tea blend at the Empress hotel, and it brings a warm herbal earthiness plus the natural indigo color that shifts to lavender, soft pink or fuchsia the moment a mixer hits the glass. Because nothing artificial is doing the coloring, that hue fades with time and sunlight, so the bottle is best used within a year and refrigerated once opened.
