Diamonds Sapiir

Zesty and floral is the short version. The longer one is that Diamonds leads with Australian citrus, native desert lime and finger lime alongside mandarin and lemon, then gets pulled back into gin territory by savoury sage, juniper and angelica root. Brunswick Aces distils each ingredient separately at their Brunswick East distillery in Melbourne and blends afterwards, which is how the citrus stays sharp instead of collapsing into one blurred note. The brand started in 2017 with a group of neighbours, one of them pregnant and another training for a triathlon, who wanted something worth drinking that wasn't beer or soft drink. They now run what they call Australia's first non-alcoholic bar and bottle shop in the same suburb. Pour 45ml over ice and top with tonic, which opens the citrus and floral layers better than anything else. Garnish with sage, or wheels of lemon and lime. The 700ml bottle is 0% ABV and its lid doubles as a jigger marked at 15, 30, 45 and 60ml.
