This one came out of a conversation with the bar team at the Savoy on Little Collins, who already stocked Brunswick Aces and wanted a blend of their own. What they got was billed as the world's first custom blend made both with and without alcohol, and it pushed the distillery into London Dry territory for the first time after years of building gins in a more contemporary style. The flavour reference is older Melbourne nightlife, back when the Savoy's Rainbow Room was among the first venues open to the public for singing, dancing and cocktails. Juniper leads, coriander seed and green cardamom bring the floral side, Meyer lemon and mandarin handle citrus, and clove and cassia bark round it out. Treat it as a classic gin. Martini first, then a Negroni, a Collins, or a plain dry tonic.
