Juniper, coriander, allspice and star anise do the classic London Dry work here, but the ingredient that makes this one Canadian is ginseng grown in Ontario. Sobrii distills its botanicals rather than steeping flavourings into water, and the result reads dry and faintly earthy instead of sweet. Expect pine and juniper on the nose with that ginseng note sitting underneath, then bright acidity, herbal bitterness and a clean finish that lingers the way a real gin does. There are no calories, no sugar and no carbs, which follows from letting botanical distillates do all the flavour work. It was built for mixing rather than sipping neat, so treat it as the base of a gin and tonic or a sour instead of something to pour over ice on its own. It took bronze at the San Francisco World Spirits Competition, the International Spirits Challenge and the LA Spirits Awards in 2022.
