Warm is the word the distillery uses for this blend, and it earns it. Cassia bark and ginger lead, juniper and zesty citrus keep the whole thing upright, and native Australian wattleseed adds a roasted, faintly nutty depth underneath. It was the second sapiir Brunswick Aces released after Spades, aimed at drinkers who found the savoury blend too austere. A yuzu or blood orange mixer suits the spice better than plain tonic, and star anise, a shard of cassia bark or a few rose petals all work as garnish. The 700ml bottle has a lid that doubles as a jigger in 15, 30, 45 and 60ml increments, a small thing that matters when nobody at the table is measuring by feel. Every botanical is distilled individually before blending.
