Switchel is the old idea underneath this. Vinegar, honey and ginger mixed with water was a working drink long before anyone thought to call it an aperitif, and Mother Root brings it back without sanding off the sharp edges. Organic apple cider vinegar, blossom honey, organic ginger juice, ginger extract and chilli extract make up the entire ingredient list. Expect zingy ginger, zippy vinegar, mellow honey and a lick of chilli heat at the back. It's a concentrate, so shake the bottle eight times, pour 25ml over plenty of ice and top with 150ml of soda water. A 500ml bottle makes around 20 drinks at that ratio, and the diluted result comes to roughly 19 calories per 100ml. Garnish with a lemon slice and a sprig of rosemary. It took a Great Taste award in 2024.
