Juniper distillate is the first thing worth knowing here, because plenty of non-alcoholic gins get their juniper from flavoring alone. This one uses a real distillate, and it shows in a nose that runs pine and spruce before the lemon and grapefruit arrive, with cucumber peel and a little coriander behind it. The palate is crisp and clean, lemon balm through the middle, a small ginger warmth at the end. The rest of the build is water, herb and spice extracts, citric acid and erythritol, at 3 calories and 0.6g of sugar per 1 fl oz pour. This is the workhorse of the UNDONE range. It carries a gin and tonic on its own, and it is the bottle that makes a zero proof Negroni possible once you add their orange bitter and vermouth. Fresh herbs help. A basil smash or a cucumber collins gives it something to hold onto.
