Mouthfeel is the quiet problem with alcohol-free spirits. Ethanol carries weight and a bit of heat, and without either one a drink can read thin no matter how good the flavor is. This expression goes at that directly, chasing the texture of a single grain vodka with warm vanilla, a hint of caramel and just enough sweetness to give the liquid some presence in the glass. Like the rest of the Spirits of Virtue range it is made with Deeside water from the Cairngorm Mountains near Balmoral Castle, which runs through highland glens on its way down to the Scottish coast. Vegan friendly, gluten free, 0.0% ABV. It is also the most cocktail-specific of the three. Vanilla belongs in an espresso martini, a white russian stand-in, or anything built on coffee, cream or cola, and it is far less useful in a plain soda and lime.
