Jukes 1 - The Classic White

The small bottle is deliberate. Jukes sells its classic cordials in 30ml doses so you set the strength yourself, which is the entire argument for mixing at home instead of buying something premixed. Pour 100ml of chilled still or sparkling water into a wine glass, add half a bottle, stir, taste, then adjust until it suits your palate. One bottle makes roughly two 125ml glasses, and a box holds nine. Inside is organic apple cider vinegar infused with peach, cucumber, plum, apple and pineapple, which reads as citrus and herb rather than as orchard fruit. Dry, aromatic and lifted, at around 16 calories per 100ml. Tonic water works in place of plain water if you want more bite. Refrigerate the bottle once it is open, and keep the unopened box somewhere cool and dark.
