Rather than dealcoholise a finished wine, this one starts with English Pinot Noir grape skins and macerates them in organic apple cider vinegar. The colour, the perfume and the structure come from the actual grape rather than from added flavouring, which is a different route to the same destination, and it shows. Red cherry and raspberry lead on the palate, delicate rather than jammy, and the finish is long and dry with energetic bubbles carrying it out. It comes in 250ml cans, four to a pack, and in a 750ml bottle if you would rather pour it at a table. Serve it chilled. This is the most conventionally wine-like drink Jukes makes, so treat it as you would a light sparkling red and put it next to charcuterie, duck or a cheese board.
