Delicate and herbal, with Mediterranean fruit sweetness and wild berry brightness rather than any serious bitterness. It is grape based, built on grape juice concentrate with botanical extracts and herbal essences, and it lands at 12 calories and 2.8g of sugar per 1 fl oz. UNDONE gives it two jobs. The first is a White Spritz with their No. 20 sparkling, the lighter cousin of the Italian Spritz. The second is more interesting, standing in for vermouth in a Negroni alongside the gin and orange bitter, which pulls the drink lighter and more floral. Serve it cold. It sits well with soft French cheese, pate, fruit and most of what you would eat before the actual meal.
