ZZVINO

Most alcohol-free wine starts as wine and has the alcohol taken out. This one never gets there. Doom Juice builds ZZVINO by washing dry grape juice over Chardonnay and Shiraz skins, then blending in real cherry, blueberry and blackberry for depth and structure. Nothing is dealcoholised, which the Australian producer argues lets the grapes keep their full, unaltered character. Those skins are pomace, the solids normally discarded after pressing, so the whole thing runs on a by-product that usually goes to waste. The fruit comes from the Central Ranges in New South Wales. It's certified organic and sustainably certified, vegan, and made with no added sulphur, at under 0.5% alcohol in a 750ml bottle. The style is refreshing and zippy, so serve it cold the way you would a chilled red.
