Ruby Cabernet and Barbera are the grapes behind this one, which is an unusual pairing and part of why it does not taste like the thin, sweet reds that give dealcoholized wine a bad name. Starla removes the alcohol after fermentation and finishes the wine at 0.5 percent, then infuses it with French lavender and fig. The aromatics run to dark cherry, blackberry, bergamot and black pepper, with the lavender softening the edges, and there is a whisper of effervescence before a genuinely dry finish. Calories, carbs and sugar all stay low. Founders Dawn Maire and Jamie Coulter built the brand for people who want the ritual of a glass of red without the alcohol, and the wine holds up to food, particularly dark chocolate or a spread of tapas. Serve it slightly cool, closer to cellar temperature than room temperature.
