Wattleseed is the unusual part. Roasted, it tastes somewhere between coffee and hazelnut, and it gives Altina's Le Blanc a savory backbone that most alcohol free whites completely lack. Around it sit native Australian forestberry, crisp apple, dry green tea tannin and a small cayenne warmth on the finish. Like its rosé sibling, this is a botanical build rather than a de-alcoholised wine, made from filtered water, botanical extracts and food acids, with no grape juice concentrate involved. A 250ml can runs 50 calories with 5g of sugar and nothing added, and it is vegan and gluten free. It does contain capsaicin. Serve it very cold in a wine glass with oysters, prawns, sushi, prosciutto or smoked cheese, where the green tea dryness does the job acidity would do in a real white.
