Altina started in 2018 when Christina Delay, a plant biologist by training, went looking for non-alcoholic wine she actually wanted to drink and came up short. She and co-founder Alan Tse now make the range out of Canberra, and this bottle shows the method. They take premium Australian Sauvignon Blanc, remove the alcohol, then rebuild the character with native botanicals instead of the concentrated grape juice and added sugar most producers lean on. The native ingredient here is finger lime, the rainforest citrus whose pearl-like flesh earned it the nickname citrus caviar. Expect white nectarine and fresh cucumber on the nose, then a crisp lingering finish with a herbaceous edge that keeps it from reading as juice. It sits under 0.02% ABV, roughly what you find in fruit juice, at 20 calories and under 0.1g of sugar per 150ml pour. Serve it properly cold with sage butter roast chicken, smoked salmon risotto, freshly shucked oysters, or a burrata salad.
