An Italian spritz lives or dies on bitterness, and De Soi gets there with gentian root, the same bitter that underpins a lot of classic amari. The brand is non-alcoholic throughout, co-founded by Katy Perry and Morgan McLachlan, and this release carries L-theanine, lion's mane and reishi mushroom alongside the botanicals. Build it the way you would build the original. Ice into a large wine glass, pour, top with soda if you want it longer, then finish with an orange slice and an olive. It belongs before a meal rather than with one.
