Juniper leads here, which is the entire point of the London Dry style and the thing most alcohol-free gins soften into oblivion. Coriander and lemon zest fill in behind it, with pine and spice giving the pour enough backbone to sit inside a Negroni-style build without disappearing. Founder Alayne MacIsaac started Lumette because the non-alcoholic shelf had nothing a cocktail drinker actually wanted, and the liquid is made the traditional way, botanicals and local mountain water in a still on Vancouver Island, run by the same team behind Sheringham Distillery. There is no detectable alcohol in the finished bottle and no imitation flavouring anywhere in it, so any color you see comes from real botanical oils. Tonic is the obvious partner. Ginger ale works too if you want the spice pushed forward. Certified gluten free, in 375ml and 750ml bottles.
