Sparkling White

This one starts as real wine. The base was chosen as a premium Australian sparkling for its green apple, citrus and pear character, then had the alcohol removed, a sequence that matters because those flavours have to survive the process rather than be added back afterward. The bubbles stay fine and the fruit stays bright, which is the whole test for an alcohol removed sparkling. It pours at 0% from a 750ml bottle and behaves like a prosecco stand in at the table, so treat it as the toast rather than a soft drink. Serve it properly chilled. 1920 is a small Australian operation with its wines produced in South Australia by a family owned winery, and the range also runs to pinot grigio, sauvignon blanc, rose and a sparkling rose.
