Oak is the part that surprises people. This spends 12 months in second and third fill barrels and in stainless tanks with French and American oak staves before the alcohol ever comes out, which is why the tannins read as integrated rather than bolted on. Expect deep ruby color, ripe red fruit, crushed black pepper, dried rose petals and candied cherry. Fermentation runs 5 to 10 days at 20 to 30°C, malolactic follows, and dealcoholization happens last, by spinning cone under vacuum at low temperature so color and body stay intact. The grapes are unirrigated bush vine Shiraz from Darling on South Africa's West Coast, picked riper than the whites at 24 to 25 balling. It holds a 2023 IWSC Silver at 93 points and a Silver at the 2025 World Alcohol Free Awards. Vegan friendly and low in calories. Mild curry or slow cooked brisket is the cellar's suggestion.
