Green apple and sweet pear, a lively bead, and a finish that lasts longer than most alcohol free sparkling manages. This is straight Sauvignon Blanc from Darling on the South African West Coast, fermented reductively to lock in the fruit and left on lees for two months before anything else happens to it. The alcohol comes out by spinning cone under vacuum at low temperature, a method that protects the body and aromatics heat would destroy, and carbonation is added back afterward. It took Silver at the 2025 World Alcohol Free Awards. Serve it cold, on its own as an aperitif or alongside seafood. The cellar points specifically at West Coast oysters, which tracks, since the vineyards sit close enough to the Atlantic for the cold Benguela current to cool them through the growing season.
